• A case contains 20 live red abalone(haliotis rufescens). Average size is 8.5 ounces and varies from 7 ounces to 10 ounces each. Provides for 6 to 10 servings. Derived from natural stock, they are grown in an abalone farm which has been developed over 20 years and operates as close as possible to natural conditions in which abalone thrive. Processed under Processed Food Registration(#6863) of the State of California Department of Public Health Food and Drug Branch.

Live red abalone were originally abundant on the Western Pacific Coast and is now becoming available in limited quantities. This species, derived from natural stock and considered to be of the highest quality abalone available, is now grown at The Abalone Farm which has been under development for over over 20 years. Growing conditions are as close to the natural environment as possible. When cooked, abalone steaks are tender, with a buttery mild and  slightly sweet flavor. Instructions for removing the meat steak from the shell and tenderizing and preparation for cooking are included.
