The coffee is produced on San Cristobal Island and comes from coffee first planted by the French in 1869. UNESCO has declared the Galapagos Islands a “Patrimony of Humanity” and laws prohibit the use of chemicals or pesticides. Green pea berry beans, which will roast more evenly, are carefully selected and typically constitute 5% of the total harvest.
