Razor Clam Risotto

Ingredients (8 portions)
3-3.2 Ounce of Cans Razor Clams / 3 cups rice / 1/2 onion finely
chopped / 2 cloves garlic / 2 cups white wine / 5 cups
shellfish stock (from cans) / 1 cup fresh cream / 4
tablespoons butter / 50 cc olive oil / 2,12 oz grated
cheese / 3 tablespoons parsley / 1 chopped tomato
Preparation
Heat butter and olive oil / Lightly fry the onion, garlic
and tomato / Add rice and fry lightly / Gradually add
wine and stock / Cook, stirring continually, over a
low heat / Add shellfish, cheese, more stock and
wine / Cook and finish with cream, butter and parsley
leaves / Serve and decorate with shellfish and
parsley leave
