They have been hand processed, which includes removal from the shells, tenderizing and vacuum packing. Derived from natural stock, they are grown in an abalone farm which has been developed over 20 years and operates as close as possible to natural conditions in which abalone thrive. They have been carefully selected from live abalone stock. They are hand shucked, trimmed, tenderized and vacuum packed under very tightly controlled quality and hygienic conditions. These steaks have a mild flavor, slightly sweet, but evocative of the sea and are ready to cook.
